My delicious discovery this week is this this Coconut Red Lentil Soup.
Such a perfect Winter warmer and full of good things. I love the chilli in it which is great for kicking your metabolism into touch.
This recipe is very versatile, although the original ingredients include quinoa and lentils, you can swap the grains to your favourite choice and add different vegetables.
There’s also turmeric in this recipe, a wonderful anti inflammatory for the stomach, but having had an enlightening conversation with an Ayurvedic doctor recently, to reap the benefits of turmeric, it’s important you use freshly grated. The powder just doesn’t hold the same magical properties.
